The first and most essential item is a pizza peel – the sort of tool you use to launch and remove those pizzas.

Because it is so essential, I recommend you think it through and pick the right pizza peel for you.

Pizza Peel Width and Handle Length

Pizza peels come in different widths, so make sure sure that yours will fit in your oven.

For example, the Chef Pomodoro Acacia Wood one is 13 inches wide. That makes it too wide for the Bertello Pizza Oven (12.5 inch opening), but it is perfect for an Ooni Koda (13.5 inch opening).

Also, if you have a bigger oven, such as the portable Ooni Pro, or a built-in oven such as the Authentic Pizza Oven Pizzaioli, you will likely want one that is 14 inches or wider to make larger pizzas.

So, if you do have a built-in pizza oven, you will likely want one with the longer handle that are 36 inches in total length.

Wood or Bamboo Pizza Peels

Wooden or Bamboo pizza peels are best for launching pizzas into the pizza oven.

While bamboo pizza peels are my favorite, wood peels are also great for launching your pizza because the dough tends to stick less to the wood or bamboo than it does to metal.

So, if you are having trouble with pizzas sticking to your metal one when you try to ‘launch’ them, this is the easiest way to fix that.

If you still have pizzas sticking to the wooden peels, make sure you are rubbing fine corn meal into it before adding the pizza dough for best results. If that still doesn’t work, your dough is too wet and you need to add more flour to the dough after it is stretched out.

Metal Pizza Peels

Use a metal peel to take the pizza out of the pizza oven.

Ooni Perforated Pizza Peel

Metal pizza peels are better known for taking the pizza out of ovens because they are thinner and easier to get under the pizza once it’s on the pizza stone.

Most people will tell you that the advantage of a perforated one is that flour and corn meal will fall through the holes so you have less of a mess. I find that the pizzas also stick a little less from the heat and moisture causing a suction effect to a solid, non-perforated piece of metal.

But, if you really want a metal one that your pizza won’t stick to, get the Ooni perforated peel. You can tell from the image above that it has 3 ridges that run the length of the surface. These ridges lift the pizza up off most of the surface area – almost no ‘suction effect’ at all. It is my favorite metal pizza peel.

Round ‘Turning’ Pizza Peel

If you are wondering what the difference is between a round pizza peel and a square pizza peel – it’s simple. The round pizza peel is designed for turning pizzas without removing the pizzas from the oven.

Some people just put it in with the handle on the right hand side and turn it to the left hand side – kinda like turning a wrench.

But, if you want to do it right, view this…

As you see in this video, you can turn the pizza while keeping it pretty much in one place. Use the outside edge of the round pizza peel and roll it around under the pizza to turn it.

A round turning pizza peel works better with a larger pizza oven such as an Authentic Pizza Oven Pizzaioli or a Chicago Brick Oven CBO-750.

Among portable ovens, this technique would work better with the larger ovens, such as the Ooni Pro or Ooni Koda 16. It’s harder to turn a pizza inside of smaller ovens, such as the Bertello or Ooni Koda.

2. Infrared Thermometer for That Outdoor Pizza Oven

Maintaining the temperature is essential for cooking Neapolitan style pizzas. If you are using wood, charcoal or wood pellets to cook your pizzas, then you will definitely want an infrared thermometer as one of your accessories.

Are you ready to cook? If your stone temperature is too low, then the bottom of your pizza is not going to cook as fast as the crust and the top of the pizza.

This is why many beginners will end up burning the top and outer crust of their pizza – while still having it under-cooked underneath.

If you use propane to cook your pizzas, then an infrared thermometer is less mandatory. Even then, I still find I use it once in a while.

Most people get a brush as one of their accessories for their pizza oven grills to clean off their pizza stone from the corn meal or flour that they put under their pizzas. This is one of the most important accessories you can get!

Those same people are super glad they have it when they spill cheese or sauce onto the stone. If you don’t brush off these spilled toppings, they can burn and cook into your next pizza – which is not desirable.

No matter how much I cook pizzas, every once in a while I still get one that falls apart in the pizza oven. It happens.

You can break pizza cutters into two distinct categories – wheel cutters or rocker cutters.

Rocker Pizza Cutter

Now, these are cool! So, if you want a pizza cutter that will really impress your friends, you need a Rocker Pizza Cutter to add to your pizza oven accessories. You’ll look like a real professional slicing through your food with one of these products!

The good rocker pizza cutters have a rolled metal handle that goes across the top. It’s easy enough to hold, but I prefer the handles of the Better or Best models.

Better models have actual handles that are built into the blade. These are even easier to hold and get leverage to apply pressure when cutting through those garden vegetable, meats, and cheese toppings.

My favorite rocker pizza cutters have handles that extend off the edges. I find that they are the easiest to hold, give me the best leverage to press down and cut pizza. I also think it looks cooler than the others!

Whatever rocker cutter you get, I recommend you get one that includes a cover with it for better storage.

6. Cast-Iron Cooking – Did Someone Say Cookies! Mmm Mmm Good!

Pizza ovens aren’t only for making homemade pizza. With various cast-iron skillets and pans I’ve cooked steak, veggies, shrimp, cobblers, cookies, and my favorite – apple crisp!

There are tons of cast-iron options out there, but to best work with a pizza oven I recommend getting your gear with removable handles. This makes it easier to rotate within your pizza oven.

For now, I am going to focus on Ooni cast-iron products because they are uniquely designed for pizza ovens.

Now, if it were a cast iron skillet for a regular oven or outdoor cooking on grills or in a fire pit, I would normally recommend Lodge brand. I have other skillets and even a dutch oven made by Lodge – and cast-iron tools is what they’ve excelled at for decades

Round Cast-Iron Skillets

Round cast-iron skillets are probably the most commonly used because they are versatile.

For example, I’ve used mine for dishes like Shrimp de Jonghe that I got from the Chicago Brick Oven company (they make amazing built-in pizza ovens and full-size countertop pizza ovens!). It’s also great for chicken and other great side dishes.

When I’m done making pizza, I often like to turn down the heat and use a round cast-iron pan to cook apple crisp or cobbler.

Where do you store your pizza oven? Some portable pizza ovens can be stored outside, but most should be stored inside.

If you store yours outside, you really must have a cover for it. Really, it doesn’t matter what material your pizza oven is made from – metal or stone – it needs protection from the elements.

If keep it in your house or garage, then you typically won’t need a cover.

However, if you own an Ooni Koda, Ooni Karu, or Ooni Fyra, you should get the carry cover to make it easier to take with you tailgating, camping, to birthday parties, family reunions – or anywhere you need a pizza party on the road!

I have had a number of people ask me if they can cook using Natural Gas.

It used to be that you if you wanted to use Natural Gas you had to install a pizza oven designed to work with Natural Gas. These were bigger ovens.

9. Table for Your Outdoor Pizza Oven

It seems pretty obvious, but you’ll want something to set your pizza oven on.

You can set it on a folding table, but these ovens do get very hot. The chances of burning a plastic table are there so you may consider getting a dedicated table for this. The one surface you want to avoid is glass – as that risks shattering and hurting someone and/or damaging your pizza oven.

There is also an advantage of having a dedicated, portable table for this. My kitchen and dining area opens up to a back deck. I like to store my Ooni Pro on a table under my roof line. Then when I cook I roll it out from under the awning and cook the pizza out on the deck.

There are many cooking and kitchen tables that can be used, but you want to make sure that you get one that can take the outdoor weather.

Just like many of my favorite accessories, my favorite pizza oven tables are made by Ooni. Ooni makes a medium table and a large table for the different sizes of pizza ovens that they offer.

Ooni Tables are designed for outdoor weather, and specifically for pizza ovens.

They will work for any brand of pizza oven under 50 lbs for sure – probably more. What I like is that they are square – which is shaped well for a pizza oven. It is wide enough for the oven and not too long where you don’t need it.

10. Pizza Board

Once you finish cooking your pizza, you’ll need somewhere to place it to cut and serve. If you’re like my mom, she likes to use those metal pizza pans you can buy at any store. Over time, though, it tends to get scratched, dented, and even rusty from repeatedly cutting on it.

One important thing to consider when buying a board is the material. Each material has its own pros and cons that can make a difference when choosing the right board for you.

Wood

Pros: Wood boards are an excellent choice for cutting pizza that are durable and can be repaired when you damage the surface. If you cut too deeply, you can always sand them down so they look brand new again.

Wood is also gentle on knives so they stay sharp and has been found to kill bacteria as you use it. Not only that, wood is very aesthetically pleasing.

Cons: Of course, the greatest downside of wood is its upkeep. If you don’t take care of it properly or buy a cheap board, it will get cracked or warped.

The other downside is that it’s not as easy to clean. You can’t put it in the dishwasher or leave it soaking as it will damage your board. And afterwards you also need to make sure you rub it with oil to replenish it.

Plastic

Pros: Plastic cutting boards are cheap, lightweight, and don’t take up much space. Unlike wood, these can be place in the dishwasher so cleanup is a breeze.

Cons: Once you make a deep cut in your plastic board, you can’t undo it. You can’t fix it like you can wood and you’ve created the perfect spot for bacteria to grow. While you can clean it, it still has the potential to be riskier for food-borne illness.

Compared to wood, plastic boards don’t last as long and aren’t as gentle on your blades. You’ll need to replace them sooner and sharpen your knives more frequently.

Personally, when I make pizza dough, I make a bigger batch then split it up into smaller pizzas. As the batch gets bigger, it can be harder to accurately split the dough evenly. But having a food scale takes out all the guess work and makes the much process easier.
